4 Boneless Chicken Breasts
2 tomatoes , chopped
1/2 onion, chopped
1 can Olives
1 clove Garlic, pressed or minced.
2 Tbs Olive oil
1 Tbs Rosemary ( fresh is best)
1 Tbs Thyme( fresh is best)
(I have also added: chopped bell pepper,1 small bunch of fresh spinach and sliced mushrooms)
Heat Oven 375. Place chicken in deep baking dish. ( I use my 9X11 pyrex)
Add a dash of salt and pepper to each breast.
In seprate bowl combined remaining ingredients. Mix gently untill veggies are coated with the oil and herbs. May add additional oil if needed. Dump veggies over the top of chicken, covering the chicken completely, ( be sure to use spatula to scrap alll oil and herbs out of bowl on to the chicken) Cover with tin foil and bake for 20-25minutes. Remove foil and continue baking until chicken is done ( 160-165) about 10 more minutes.
Yummy! Even my boys love how moist the chicken is and I cut the veggies big so they can pick and choose. We serve ours with couscous salad or even brown rice. So So good for ya. Here is estimated stats:

What is cooking at the Johnson's: Coke Cupcakes
May people have asked and so I will try to deliver. Here is one yummy and lowfat creation that we eat at our house.
Chocolate Coke Cupcakes
One Box Devils Food Cake Mix( I love Duncan Hines)
One can Diet Coke(can used decaffinated)
Dump cake mix and coke in large bowl. (kids love helping pour the coke..it fizzies) Mix untill smooth. Spoon batter into cupcake papers.(I often use a 1/4 cup measuring cup to get even cupcakes) If you are not using the papers be sure to generously spray( Pam etc) the pan. Bake at 350 for about 18 minutes. Let cool and then sprinkle with a little bit of powdered sugar.
I have also tried this same concept with:
Diet Sprite and Yellow Cake
Diet Sprite and Lemon Cake
Diet Cherry 7up and Lemon Cake
Diet Cherry Coke and Chocolate Cake
All have turned out yummy
Go crazy make your own creation. Just stick to the Diet Sodas- sugary ones do not work. Remember it still has the same amount of sugar as regular cake so don't go too too crazy with the eating part. The advantage to using the soda is there will be very little fat- (most recipes have three grams per serving as opposed to 14 grams) Also the soda version has no cholesterol.
I firmly believe this is what diet soda was truly created for-- to allow my "diet" to be sinfully yummy. :)
